Ingredients

◦ 1 ripe avocado (½ cup mashed)
◦ ½ cup cacao powder (or cocoa powder)
◦ 4 tablespoons aquafaba
◦ 1 cup coconut sugar (or brown sugar)
◦ ¼ cup almond butter
◦ 1 teaspoon baking powder
1 teaspoon vanilla extract
◦ ¼ teaspoon fine sea salt

       

      Method

      1. Preheat oven to 160ºC and line a 9-inch square baking tin with baking paper.
      2. Mash or blend the avocado until smooth.
      3. Combine avocado, cacao powder, aquafaba, coconut sugar, almond butter, baking powder, vanilla, and salt. Blend until smooth and glossy.
      4. Pour mixture into your prepared tin and spread evenly.
      5. Bake for around 45 minutes, or until the centre is set and the top looks slightly firm.
      6. Allow to cool completely (this helps the chocolate flavour deepen and removes any residual avocado taste). Chill in the fridge if you’re impatient — it works beautifully either way.
      7. Slice into squares and serve.

      Tip: Because these are flourless and extra fudgy, they may stick slightly to the knife — that’s part of the magic.
