We all know we are meant to eat our veggies. While it is recommended that we eat from the full colour spectrum of vegetables, it is vital that we all get a daily dose of greens. For optimum health and beauty, greens are the way! Some people find this very easy, other people just can’t stand anything leafy or green. And while it may be overwhelming to sit down to a whole bowl of spinach, here are some easy ways to include greens into your diet, without making them the main event.
Parsley
Full of Vitamin K, Vitamin C, beta-carotene and iron and has healing properties for the skin. It is known to prevent lines, reduce scarring and dark circles, heal and clear the skin. Luckily it can be used to garnish just about anything!
Fruit salad
A sprinkling of chopped mint and parsley on a fruit salad adds a dash of colour and flavour. It might seem a new idea to add parsley (traditionally thought of as a savoury herb) to sweet dishes, but the taste can complement the sweetness of fruit nicely. A mix of watermelon, almonds and parsley makes a great side salad for dinner.
Roast vegetables
While you may be used to added olive oil and salt to your roast vegetables, next time try a chopped bunch of parsley as well. The fresh flavour cuts through the richness of the oil and aiding in digestion.
Smoothies
Traditionally a smoothie had three ingredients: banana, milk and ice cream. We have come a long way from those days! Smoothies are a nutritious way to ensure we get our daily dose of fruit and vegetables. While a fruit base of bananas, berries, melon or apple is great, you can add as many greens as you like. This is particularly good for people who have trouble squeezing greens into other meals. With a non-dairy milk such as almond milk, fruit, and greens, you will barely taste them! Try a handful of parsley in your breakfast smoothie. In addition – chopped cucumber, zucchini, celery, broccoli, kale, mint. Your skin will thank you!
