
longevity salad
I love the simplicity of this salad with ingredients that add years to your life. Whenever I create a recipe, I’m always thinking of how I can boost the nutrients while making sure it tastes delicious. This salad is easy to throw together with some basic staples.
Prep: 15 minutes | Serves: 2
2 large handfuls mixed salad leaves
2 radishes, thinly sliced
1 handful of your favourite sprouts
1 small handful herbs, chopped (mint, parsley or dill)
2 tablespoons pickled veggies
1 tablespoon goji berries or pomegranate
¼ cup arame seaweed, soaked 15 minutes
Celtic salt and pepper, to taste
Mustard Dressing
Place salad leaves, radish, sprouts, herbs, vegetables, berries or pomegranate and seaweed in a bowl. Season to taste. Drizzle with the dressing and gently toss to coat. Check seasoning and add salt or pepper if needed. Top with the herbed olive cheese and a sprinkle of hemp seeds and serve.
Note: This salad keeps well in the fridge for a couple of days. Dress only as needed.
Mustard Dressing
Prep: 5 minutes | Equipment: blender | Makes: 1¼ cup
1 cup olive oil
¼ cup lemon juice
1 tablespoon mustard
1 tablespoon coconut nectar
¼ teaspoon Celtic salt
Place all ingredients into a blender and blend until smooth. Use immediately or refrigerate for 2 weeks.
